I Lived to Tell


I lived through the night and actually ate pretty well today. Honey Nut Rice Chex for breffus. Chicken, Ham and Swiss for lunch. And this pretty thing for dinner — Bangers and Mash. Only four ingredients.

Bangers and Mash

8 Johnsonville precooked Apple Chicken Sausages

5 ounces fresh baby spinach

2 teaspoons yellow mustard

2 pounds prepared mashed potatoes (Bob Evans seems GF on label)

Slice sausages on the bias. Brown them in a large skillet. Slowly add spinach until it all wilts. Then stir in mustard. Serve over warmed potatoes.

Feeds 4-8 (depending on how ravenous you are)
